Palak paneer night
I joined a CSA (farmshare veggies) last week, and got a huge batch of greens. I am not a big fan of leafy greens, but box in hand, I had to make something with it. Last week I made Mujadara, a lebanese lentil-rice stew. Last night, I decided to make palak paneer with the remaining greens (I did have to supplement a little with frozen spinach & turnip greens).
Onions, spices, and chard stems

Spice mix for the day- cumin, cilantro, fenugreek, cinnamon, with traces of fennel and black peppercorn.

Once the leaves were cooked, I pureed them, added them back in the pot and simmered the paneer in it till it all came together. Some cream to finish, and voila- dinner in 30 minutes! It did not meet my 1-pot dinner gold standard for minimizing messes, and I had to use a blender, but it was all worth it. PLUS I managed to clear the fridge of greens before the next batch arrives this week!
