Weekend food adventures
Life’s been a little hectic after getting back to work, but I still try and play with food over the weekend. My first creation was a Masala chai whiskey sour, based loosely on this recipe from the Thrillist. I made my chai mix rather differently, so that I could adjust the amount of sugar to taste. Lets just say – YUM.
I adapted my old favorite Carolina pulled pork recipe to be a little bit more Texan. More cowbell! The result was delicious, and we ate it as tacos with Franklin’s Barbecue sauce.
Next up, another favorite – weeknight chicken and dumplings from a recipe my Cooking Light cookbook. I love repeating these crowd-pleaser recipes.
Malaysian style eggplant and paneer, based on this aubergine and paneer recipe. I did doctor the recipe (what’s new?) – seasoned the paneer before frying, slit the little eggplants, sprinkled with salt and nuked them, added ground cashewnuts to the spice paste, and some other hacks I’ve obviously forgotten! Anyhow, everyone loved it, so that’s what matters 🙂

So in all, life’s been crazy busy, but I still have the energy to play in the kitchen. I guess that’s good news for the whole family 😀
