Pork tenderloin dinner
Sometimes the simplest recipes make for a delicious meal. I had a stash of coffee rub in my freezer, that I had made with this recipe from Lambert’s Restaurant.
Taking 5 minutes out of my running-to-work morning routine, I rubbed the dry rub on a chunk of pork tenderloin, and patted coarse some sea salt in. In the evening, I browned it on all sides and then stuck the pan in a 450 degree oven for 20 minutes, lightly covering the meat with foil. It was incredibly tender and tasty. In absolute terms, as well as return on investment, this was an excellent meal!
