Three Cup Chicken

I had some delicious Filipino food today, and while scouring the web for Filipino adobo chicken recipes, I came across this website chock full of pressure cooker  recipes. I have a traditional (scary, steam & whistle blowing kind) pressure cooker, and it is the perfect pot for meals that need to get done in a hurry.  5 out of 7 days of my week, “hurry” is all I am doing. Having decided on what I was going to cook (San Bei Ji – Three Cup Chicken), I needed to dress my plain leftover rice up.

I quickly sautéed some onions with sesame seeds & ginger, tossed in a cup of veggies (after steaming them in the microwave for two minutes), two eggs, about 4 cups of cooked rice, and a few tablespoons of mirin & soy. Quickest rice ever.

Meanwhile, the chicken was getting done in the pressure cooker. I stayed as true to the recipe as I could (no time to cook implies no time to buy ingredients like light soy sauce or thai basil leaves). I suggest using low-sodium soy though, specially if you tend to prefer your food less salty. In all, it turned out delicious and Ro approved too.
