July 4th
We had a rather spectacular July 4th “weekend” this year. First all the boating & spring swimming on the actual weekend, followed by Jul 3rd dinner with dear friends who have a great view of the neighborhood’s fireworks. And of course, the obligatory neighborhood parade on the 4th.

After a long & hot morning, all I can manage is a 5-minute meal. Good thing the kid loves my curry-coconut chicken salad! He even helped crush the almonds that go in it.
