Shakshuka
I indulged in some easy dinner and tried out this recipe for Shakshuka (aka Eggs in Purgatory).

I dropped some ingredients, added some, and forgot one. Turned out wonderful! We ate it with Israeli Couscous , and it was a huge hit!
It fits all my requirements of being quick, tasty, no sides needed, and one pot. I don’t count the couscous as a second thing to cook. Even I have time for that!
Dropped: feta, hot peppers
Forgot: Parsley
Added: Spinach
