Seed-uce me!

Whole Foods sells a bread called Seeduction Bread, and my family has been hooked on it for a few years. Because of the alarming rate at which we run out of it, I’ve started experimenting with trying to duplicate it. Unfortunately, Whole Foods has not published the recipe anywhere. The Internet would know.

My first attempt was conservative. 1:2 ratio of wheat to bread flour. I had no gluten at hand to support more wheat. I stuck with millet and poppy seeds, since I didn’t have sunflower seeds or pumpkin seeds. I subbed some brown sugar for molasses since I didn’t have any of that either. The bread was DELISH! Ro said he liked it even better than the real deal. It was a tad too sweet for me though.

I made a second attempt this past week with molasses added, and a 1:1 ratio of wheat to bread flour. Bought gluten and used it too. This loaf turned out way truer to original, but we’re not quite there yet. Part of it is just attributable to the fact that I use a bread machine, but I haven’t cracked the code 100%. However, both the extremely picky bread customers in my house seem to love the second version, so future changes will be minor. Nothing like the smell of fresh bread to make your house feel like home!
