Cauli and Israeli couscous
Ro likes Israeli couscous way more than regular couscous, and I am often looking for new ways to prepare it. I hit jackpot lately with this recipe. I remained fairly true to the recipe, and opted to top it with almond slices toasted in coconut oil.
I prepared a coconut cauliflower curry to go with it, and topped it with a runny sunny side up. Both Ro and I enjoyed this meal a lot!
