Thai chicken wings
I’ve been off my cooking game lately, but a craving for sweet & spicy food made me get back to it. I looked up recipes for Thai Chicken Wings and found this one at Rasa Malaysia, which is one of my favorite recipe sites for south-east Asian food. I didn’t have the sweet chili sauce it called for, so I looked up a recipe for the sauce, and used it to approximate the final product.
In my approximation, I replaced the 4 tbsp of thai sweet sauce with:
2 tbsp regular sugar
1 tsp turbinado sugar
2 tbsp rice vinegar
1 tsp chilli paste
1 tsp crushed garlic
Since I was adding to a marinade & not a dressing, I wasn’t too worried about consistency. I marinated the chicken overnight and roasted in a 400 deg oven for 30 mins, turning halfway through. The final product was delicious! I served it with napa cabbage, lightly sauteed with sesame seeds, ginger paste, and one dried chilli. Nom. nom.
